There’s nothing better than waking up to an amazing south Indian breakfast which will make your morning all the more better.
Milagapodi is a coarse spice powder originating from the Indian subcontinent with a mixture of ground dry spices. This vegan recipe is usually mixed with some sesame oil or ghee and served with Idli or Dosa. Or as we all commonly have eaten it at our favorite south Indian restaurant and udipis.
As my mother was making this recently, I thought of learning the recipe and sharing it with you all. Here’s how:
To make this powder you will need the following ingredients-
- 1/4th cup sesame seeds
- 2 tbsp Oil
- 5-10 dried red chilies
- 1/4th cup channa dal
- Half cup urad dal
- Karipata or curry leaves
-The first step is to take a frying pan and add 1/4th cup sesame seeds. Roast them lightly until they turn golden brown. Once they’re roasted, empty them onto a plate.
-Now in the frying pan add oil and 1/4th a cup of channa dal and half cup urad dal; sauté it all on a low flame.
– Next, add 2 tbsp of oil and add 5-10 dried red chilies, sauté them until they puff up. (optional- add karipata/curry leaves) empty all of these to the plate as well.
-After all the ingredients are fried and moved to another plate, fry some Jeera in a similar manner until golden brown and move that to the same plate as all the others.
– Once all the ingredients have cooled down, in a mixer add all of the ingredients and add half a tsp of turmeric powder and salt to taste. Blend them all together until coarse.
Voila! The Podi is ready!
